Pear-ripening can be tricky business. Apples deceivingly last a long time … until they don’t. Too much stone fruit to eat in one go? Let this recipe be your savior. Avoid your compost by making compote.
Ingredients
- 2 cups diced fruit (pear/apple/peach/plum)
- Splash of vanilla
- 1 inch ginger, skinned & minced
Preparation
- Throw all ingredients into a pot with lid.
- Heat on medium until it starts to bubble.
- Lower to simmer or low and let it roll till you’re over trying to watch it (at least 20 mins). If you want to let it roll without a timer, keep it on the lowest setting possible.
- Strain any leftover liquid into a cup and drink it.
- Pour the rest into a food processor/blender & pulse till its the texture you like.
- Add sweetener of choice to taste.
