Gingered Compote

Pear-ripening can be tricky business. Apples deceivingly last a long time … until they don’t. Too much stone fruit to eat in one go? Let this recipe be your savior. Avoid your compost by making compote.


Ingredients

  • 2 cups diced fruit (pear/apple/peach/plum)
  • Splash of vanilla
  • 1 inch ginger, skinned & minced


Preparation

  1. Throw all ingredients into a pot with lid.
  2. Heat on medium until it starts to bubble.
  3. Lower to simmer or low and let it roll till you’re over trying to watch it (at least 20 mins). If you want to let it roll without a timer, keep it on the lowest setting possible.
  4. Strain any leftover liquid into a cup and drink it.
  5. Pour the rest into a food processor/blender & pulse till its the texture you like.
  6. Add sweetener of choice to taste.
