DIY Mayo

Who knew chickpea juice would make such an excellent mayo base!? Minimalist Baker did. There is nothing more empowering than the ability to make your own mayo. Skip the dozens of plastic and mostly non-vegan jars of mayo and make this instead! Adapted from Minimalist Baker.


Ingredients

  • 1/4 cup aquafaba (chickpea juice)
  • 3/4 cup neutral oil (unhydrogenated canola, grapeseed or vegetable oil works best)
  • 2 tablespoon apple cider vinegar
  • 3 teaspoons maple syrup
  • 1 tablespoon mustard
  • 1/4 teaspoon salt
  • *requires an immersion blender


Preparation

  1. In a deep bowl, combine all ingredients.
  2. Blend with immersion blender until totally emulsified (about 30s).
